Rice Soup with Fish
Rice soup with fish is a perfect nourishing breakfast choice for school days. It’s light but protein-rich, with a plus of omega-3 fatty acid, which reduce cardiovascular disease risk.
Ingredients
- Cooked rice1-2 cups
- Fish fillet10 pieces
- Broth (chicken or pork bones)1 litre
- Coriander root
- Peppercorns
- Garlic
Grated galangal, for sprinkle over rice- Fish sauce2 tablespoons
- Soy sauce4 tablespoons
- Salt¼ teaspoon
Fried garlic, for garnish- Peppercorns
- Leaf celery, for garnish
Instructions
1Season the prepared broth with salt and a mixture of crushed coriander roots, garlic, and white peppercorns.
2Bring to a boil and add fish. Do not stir before the fish is cooked to avoid fishy taste.
3Season with fish sauce, soy sauce, and garnish with leaf celery.
4Scoop rice into a bowl, sprinkle with grated galangal to reduce fishy smell. Pour fish and soup over rice. Garnish with fried garlic and ground pepper to enhance the flavour.
